The mountain village Pang Khon of the Akha people in the province of Chiang Rai has just about 350 inhabitants, distributed to about 70 households. In the small village the coffee is omnipresent. The shrubs are growing everywhere and almost every inhabitant is involved in its growing and production. The harvest is exculsivley done by hand. Any green or overripe cherries are separated out in the quality assurance process, and the coffee is washed and fermented for 36 hours to ensure a complex and intriguing character. The coffee is then dried on bamboo mats for approximately 12-22 days.
